Ingredients

300ml your favourite unsweetened plant-based milk

1 teaspoon vanilla bean paste

275g plain flour

2 level teaspoons baking powder

1 ripe banana

Greek-style vegan yoghurt, to serve

320g seasonal berries, such as strawberries, raspberries, blackberries

maple syrup, for drizzling

Method

  1. Pour the milk into a blender, along with the vanilla, flour and baking powder. Peel and break in the banana, then blitz until smooth.
  2. Preheat your waffle maker. Once hot, ladle in the batter mixture then close the lid, and cook according to the machine instructions, until the waffles are crisp and golden.
  3. Transfer the waffles to a plate, top with a dollop of vegan yoghurt, some seasonal berries and a drizzle of maple syrup, to taste.
